Instructions

  1. Combine Ingredients: In a tall, narrow container, combine the aquafaba, apple cider vinegar, cane sugar, salt, and mustard.
  2. Start Blending: Place the immersion blender at the bottom of the container and start blending on low speed.
  3. Add Oil Gradually: Slowly pour in the oil while blending. This gradual addition is key to achieving a stable emulsion.
  4. Increase Speed: Once the mixture starts to thicken, increase the blender speed to high until the mayonnaise reaches the desired consistency.
  5. Adjust Thickness: The more oil added, the thicker and creamier the mayo becomes. Adjust to desired consistency.
