  • 2 cups broccoli florets, steamed (150g)
  • 1/2 cup homemade mozzarella, shredded (or nutritional yeast) (60g)
  • 1/4 cup cream or coconut cream (60 ml)
  • 1/2 teaspoon hing (asafoetida)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Rice and Broccoli: Cook the brown rice according to package instructions. Steam the broccoli florets until tender.
  2. Preheat the Oven: Preheat your oven to 375°F (190°C).
  3. Assemble the Casserole: In a large mixing bowl, combine the cooked rice, steamed broccoli, shredded homemade mozzarella (or nutritional yeast), cream, hing, salt, and pepper. Mix well.
  4. Transfer to a Baking Dish: Lightly grease a baking dish with olive oil. Transfer the rice and broccoli mixture to the dish and spread it out evenly.
