These idlis combine simple, wholesome ingredients to create a delicious addition to your meals. In the tradition of Gaudiya Vaishnavism, preparing and offering food to Krishna is an act of love and devotion, known as bhakti. Each dish is prepared with care, mindfulness, and a pure heart, making it not just a meal but a spiritual offering.

Ingredients

  • 1 cup idli batter (prepared as in the plain idli recipe)
  • 1/4 cup grated carrots
  • 1/4 cup chopped green beans
  • 1/4 cup green peas
  • 1/4 cup chopped capsicum
  • 2 green chilies, chopped
  • A few curry leaves, chopped
  • Salt to taste
  • Oil for greasing

Instructions

Prepare Batter:

  1. Mix Vegetables:
    • In a bowl, combine the idli batter with grated carrots, chopped green beans, green peas, chopped capsicum, chopped green chilies, curry leaves, and salt. Mix well.

Steam Idlis:

  1. Prepare Steamer:
    • Grease idli molds and pour the batter into each mold.
  2. Steam:
    • Place the idli stand in a steamer or pressure cooker without the weight. Steam for 10-12 minutes or until a toothpick inserted comes out clean.
  3. Cool and Unmold:
    • Allow the idlis to cool slightly before removing them from the molds.

Serve:

  1. Serve Hot:
    • Serve hot with coconut chutney and sambar.

Notes

  • Variation: Add a handful of roasted cashews for extra flavor and crunch.
  • Storage: Store any leftover idlis in an airtight container in the refrigerator for up to two days.
