  • 1/2 cup rice (any variety, preferably white rice)
  • 2 cups milk (dairy or plant-based)
  • 12 tablespoons jaggery or sugar (to taste)
  • A pinch of cardamom powder (optional)
  • A pinch of salt
  • Water as needed

Instructions

Prepare the Porridge:

  1. Cook Rice:
    • In a saucepan, rinse the rice thoroughly and combine with 1 cup of water. Cook the rice on medium heat until soft and fully cooked.
  2. Add Milk and Sweetener:
    • Once the rice is cooked, add the milk, jaggery or sugar, cardamom powder (if using), and a pinch of salt. Stir well and continue to cook on low heat, stirring occasionally, until the porridge reaches your desired consistency.
  3. Serve Hot:
    • Pour the rice porridge into bowls and serve hot. Top with nuts or dried fruits if desired.

Notes

  • Variation: For a creamier porridge, use full-fat milk or add a spoonful of ghee before serving.
  • Sweetener Substitute: You can use honey, maple syrup, or any other sweetener in place of jaggery or sugar.
  • Storage: Rice porridge is best enjoyed fresh, but you can store leftovers in the refrigerator for up to a day and reheat before serving.
