  • 3/4 cup water
  • A pinch of baking soda
  • 1 cup sugar
  • 1/2 cup water (for syrup)
  • A few drops of rose essence or cardamom powder (optional)
  • Oil for frying

Instructions

  1. Prepare Batter:
    • In a bowl, mix gram flour and a pinch of baking soda.
    • Gradually add water and whisk until you get a smooth, lump-free batter.
  2. Make Sugar Syrup:
    • In a pan, combine 1 cup sugar and 1/2 cup water.
    • Cook on medium heat until it reaches a one-string consistency.
    • Add a few drops of rose essence or a pinch of cardamom powder if using. Set aside.
  3. Fry Boondi:
    • Heat oil in a deep frying pan over medium heat.
    • Pour the batter through a perforated spoon or boondi maker to form tiny droplets into the hot oil.
    • Fry until golden and crisp. Remove with a slotted spoon and drain excess oil on paper towels.
  4. Soak in Syrup:
    • Immediately transfer the fried boondi into the warm sugar syrup.
    • Allow it to soak for about 10-15 minutes, stirring occasionally to coat evenly.
  5. Serve:
    • Drain any excess syrup if needed before serving your sweet boondi.
