For the Laddus:

  • 1 cup semolina (rava) (180g)
  • 1/2 cup ghee (120 ml)
  • 3/4 cup sugar (150g)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (cashews, almonds)
  • 2 tablespoons raisins

Instructions

  1. Roast the Semolina: In a heavy-bottomed pan, heat ghee over medium heat. Add the semolina and roast, stirring constantly, until it turns golden brown and emits a nutty aroma. This process may take about 10-12 minutes.
  2. Add Sugar and Nuts: Remove the pan from heat and allow the roasted semolina to cool slightly. Add sugar, cardamom powder, chopped nuts, and raisins. Mix well until combined.
  3. Shape the Laddus: While the mixture is still warm, take small portions and shape them into round laddus using your hands. Place the laddus on a plate and allow them to cool completely.
  4. Serve at Room Temperature: Serve the rava laddus at room temperature with your favorite side dish.

Notes

  • Variation: Add a few tablespoons of grated coconut for an extra layer of flavor.
  • Storage: Store any leftover laddus in an airtight container at room temperature for up to one week.
