  • 1/2 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 (15 oz) can sweet corn, drained
  • 1 (15 oz) can cream style corn
  • 1 cup sour cream
  • 2 chia eggs (or flaxseed eggs)*
  • 1/2 cup melted butter (1 stick)
  • 3 tablespoons sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a baking dish and set aside.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, yellow cornmeal, baking powder, and salt. Mix well.
  3. Add Wet Ingredients: Add the drained sweet corn, cream style corn, sour cream, chia eggs (or flaxseed eggs), melted butter, and sugar to the dry ingredients. Mix until well combined.
  4. Pour into Baking Dish: Pour the mixture into the greased baking dish, spreading it out evenly.
  5. Bake: Bake in the preheated oven for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
