For the Kulfi:

  • 4 cups whole milk (960 ml)
  • 1/2 cup sugar (100g)
  • 1/4 cup rose water (60 ml)
  • 1/4 teaspoon cardamom powder
  • A few strands of saffron (optional)

Instructions

  1. Reduce the Milk: In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring frequently, until the milk reduces to half its original volume. This process may take about 45 minutes to 1 hour.
  2. Sweeten the Milk: Add sugar and cardamom powder to the reduced milk. Continue to simmer for another 5-7 minutes until the sugar dissolves completely. Remove from heat and allow to cool slightly.
  3. Add Rose Water: Stir in rose water and a few strands of saffron, if using, until well combined.
  4. Freeze the Kulfi: Pour the mixture into kulfi molds or small cups. Cover with aluminum foil and insert an ice cream stick in the center. Freeze for 6-8 hours or until fully set.
  5. Serve Frozen: To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Serve immediately.
