Ingredients

Scale

For the Kulfi:

  • 4 cups whole milk (960 ml)
  • 1/2 cup sugar (100g)
  • 1/2 cup ground pistachios (75g)
  • 1/4 teaspoon cardamom powder
  • A few strands of saffron (optional)

Instructions

  1. Reduce the Milk: In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring frequently, until the milk reduces to half its original volume. This process may take about 45 minutes to 1 hour.
  2. Sweeten the Milk: Add sugar, ground pistachios, and cardamom powder to the reduced milk. Continue to simmer for another 5-7 minutes until the sugar dissolves completely. Remove from heat.
  3. Add Saffron: Stir in a few strands of saffron, if using, and allow the mixture to cool slightly.
  4. Freeze the Kulfi: Pour the mixture into kulfi molds or small cups. Cover with aluminum foil and insert an ice cream stick in the center. Freeze for 6-8 hours or until fully set.
  5. Serve Frozen: To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Serve immediately.

Notes

  • Variation: Add a few drops of rose water for a fragrant twist on the classic pistachio flavor.
  • Storage: Store any leftover kulfi in the freezer for up to one week.
