Hare Krishna Malai Kulfi is a rich and indulgent dessert, inspired by the principles of bhakti yoga. This kulfi recipe uses reduced milk, sugar, and cardamom to create a creamy treat that can be enjoyed at any time of day. In the tradition of Gaudiya Vaishnavism, preparing and offering food to Krishna is an act of love and devotion, known as bhakti. Each dish is prepared with care, mindfulness, and a pure heart, making it not just a meal but a spiritual offering.

For the Kulfi:

  • 4 cups whole milk (960 ml)
  • 1/2 cup sugar (100g)
  • 1/4 teaspoon cardamom powder
  • 1/4 cup chopped nuts (pistachios, almonds)
  • A few strands of saffron (optional)

Instructions

  1. Reduce the Milk: In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce the heat and simmer, stirring frequently, until the milk reduces to half its original volume. This process may take about 45 minutes to 1 hour.
  2. Sweeten the Milk: Add sugar and cardamom powder to the reduced milk. Continue to simmer for another 5-7 minutes until the sugar dissolves completely.
  3. Add Nuts and Saffron: Stir in chopped nuts and saffron strands (if using). Mix well and remove from heat.
  4. Freeze the Kulfi: Pour the mixture into kulfi molds or small cups. Cover with aluminum foil and insert an ice cream stick in the center. Freeze for 6-8 hours or until fully set.
  5. Serve Frozen: To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Serve immediately.

Notes

  • Variation: Add mango pulp to the mixture before freezing for a fruity twist.
  • Storage: Store any leftover kulfi in the freezer for up to one week.
