For the Burfi:

  • 1 cup condensed milk (240 ml)
  • 1/2 cup milk powder (60g)
  • 1/4 cup sugar (50g)
  • 1/4 cup ghee (60 ml)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (cashews, almonds)
  • A few strands of saffron (optional)
  • 2 tablespoons carob powder (optional, for chocolate burfi)

Instructions

  1. Cook the Burfi Mixture: In a heavy-bottomed pan, heat ghee over medium heat. Add condensed milk, milk powder, and sugar. Stir continuously, ensuring there are no lumps. Cook until the mixture thickens and starts to leave the sides of the pan. This process may take about 15-20 minutes.
  2. Flavor the Burfi: Add cardamom powder, chopped nuts, and saffron strands (if using). For chocolate burfi, add carob powder at this stage. Mix well to combine.
  3. Set the Burfi: Grease a square or rectangular dish with ghee. Pour the cooked mixture into the dish and spread it evenly. Let it cool at room temperature until it sets.
  4. Cool and Cut: Once set, cut the burfi into square or diamond-shaped pieces.
  5. Serve at Room Temperature: Serve the burfi at room temperature with your favorite side dish.
