For the Papadam:

  • 1 cup urad dal flour (120g)
  • 1/2 teaspoon salt
  • 1/4 teaspoon asafoetida (hing)
  • 1/4 cup water (60 ml), approximately
  • Oil for frying

Instructions

  2. Divide Dough: Divide the dough into 12 equal portions and shape them into balls.
  3. Roll Out Papadams: Roll out each dough ball into a thin, round papadam, about 4-5 inches in diameter.
  4. Fry Papadams: Heat oil in a deep frying pan over medium heat. Once hot, carefully slide a rolled-out papadam into the oil. Fry until crispy and golden. Remove and drain on paper towels.
  5. Serve Hot: Serve the papadams hot with your favorite side dish.

Notes

  • Variation: Add a pinch of black pepper or cumin seeds to the dough for extra flavor.
  • Storage: Store any leftover papadams in an airtight container at room temperature for up to a week.
