For the Puri:

  • 24 store-bought or homemade puris

For the Filling:

  • 2 medium potatoes, boiled and diced
  • 1 cup boiled chickpeas
  • 1 cup yogurt, whisked
  • 1/4 cup tamarind chutney
  • 1/4 cup mint chutney
  • 1/4 cup chopped fresh coriander leaves
  • 2 tablespoons sev (crunchy chickpea noodles)
  • 1 teaspoon chaat masala
  • Salt to taste

Instructions

Prepare Filling:

  1. Mix Ingredients:
    • In a bowl, combine diced potatoes, boiled chickpeas, chaat masala, and salt.
    • Mix well and set aside.

Prepare Puri:

  1. Assemble Puri:
    • Gently tap the top of each puri to make a small hole.
    • Fill each puri with the potato-chickpea mixture.

Add Yogurt and Chutneys:

  1. Add Yogurt:
    • Spoon a generous amount of whisked yogurt into each filled puri.
  2. Add Chutneys:
    • Drizzle tamarind chutney and mint chutney over the yogurt-filled puris.

Garnish and Serve:

  1. Garnish:
    • Garnish with chopped fresh coriander leaves and sev.
  2. Serve:
    • Serve immediately for the best taste and texture.
