This shrikhand recipe uses strained yogurt, sugar, and saffron to create a rich and flavorful treat that can be enjoyed at any time of day. In the tradition of Gaudiya Vaishnavism, preparing and offering food to Krishna is an act of love and devotion, known as bhakti. Each dish is prepared with care, mindfulness, and a pure heart, making it not just a meal but a spiritual offering.

For the Shrikhand:

  • 2 cups plain yogurt (480 ml)
  • 1/2 cup powdered sugar (100g)
  • 1/4 teaspoon cardamom powder
  • A few strands of saffron soaked in 1 tablespoon warm milk
  • 2 tablespoons chopped pistachios or almonds (for garnish)

Instructions

  1. Strain the Yogurt: Place the yogurt in a muslin cloth or cheesecloth and tie it tightly. Hang it over a bowl to drain the whey for 4-6 hours, or until the yogurt becomes thick and creamy.
  2. Mix the Shrikhand: Transfer the strained yogurt to a mixing bowl. Add powdered sugar, cardamom powder, and saffron milk. Whisk until smooth and creamy.
  3. Chill the Shrikhand: Refrigerate the shrikhand for at least 1 hour before serving to allow the flavors to meld.
  4. Garnish and Serve: Serve the shrikhand chilled, garnished with chopped pistachios or almonds.

Notes

  • Variation: Add a few drops of rose water for a fragrant twist.
  • Storage: Store any leftover shrikhand in an airtight container in the refrigerator for up to three days.
